Chicken Salad with Sesame Ginger Vinaigrette
Ingredients:

Dressing:

2 tbsp canola or vegetable oil
2 tbsp rice wine vinegar
1 tbsp soy sauce
1 tsp Dijon mustard
¼ tsp sesame oil
6-7g ginger root, peeled
2 tbsp honey
1 tsp sesame seeds

Salad:

280g field lettuce, chopped
150g Napa cabbage, chopped
150g red cabbage, chopped
1 carrot, peeled and shredded
170g chicken breast, cooked and thinly sliced
2 scallions, trimmed and chopped
20g roasted cashews
15g crispy chow mein noodles

Directions:

Place oil, vinegar, soy sauce, mustard, sesame oil, ginger and honey into the blender. Press Start and blend on a medium-high speed until smooth. Add sesame seeds and Pulse just to combine. Set aside,  In a large serving bowl, toss lettuce, cabbages and carrot. Add 4 to 5 tablespoons vinaigrette and toss to coat. Divide salad mixture between two plates and top with chicken breast, onions, cashews and crispy noodles. Drizzle with additional vinaigrette and serve right away.
